Hibiscus Kiss: Tanzania Idwili Mbeya

Grown at 1,741 meters above sea level in the Mbeya region of Tanzania found north of Lake Malawi, Hibiscus Kiss owes much of its character to the fermentation wash process used by producers. The Idwili AMCOS collective acquired a pulper and built their drying beds in 2019. They’ve been making fully washed coffee ever since.
The farmers deliver Bourbon derivative cherries from 2-6pm, with the pulper being turned on at 3pm. After being pulped and sorted into various grades in the washing channels, the parchment is fermented for 24-48 hours, washed then soaked for 8 hours, and dried on raised beds for 11-14 days.
