Manos Juntas is a micromill, located in the Cauca region of Colombia. 8 different farmers deliver fresh full coffee cherry to the micromill and are paid on the spot. From there Banexport, the exporting company that owns and operates the micromill, takes this coffee through a Double Anaerobic Fermentation process. What does this mean? Full coffee cherries are placed into a sealed bin, where fresh oxygen cannot enter the container. As a result, it slows the fermentation process down, allowing for better utilization of the sugars during the fermentation process creating a taste profile with a delicate acidity, intense fruit flavors, and layers of complexity that make this coffee special.

Banexport believes in simplifying tasks and responsibilities, and they achieve exactly that through their model. By taking ownership over processing the coffee cherries, they free the farmer of this responsibility allowing them to focus on nurturing their coffee trees. Farmers are paid on the spot when they drop off cherries, and they are paid by the weight of cherries that they produce. This means that the riper the cherries are, the better quality and the more the farmer will be paid. As soon as the cherries hit the micromill, Manos Juntas closely monitors the Briggs (sugar content) and ph of the coffee cherries from beginning to end, creating a highly controlled fermentation process, which is crucial to maximizing the flavor potential of the coffee. This natural-process anaerobic coffee has unique flavor notes of candied strawberry, honeydew, and cacao. Try it at home as a pour-over, or as espresso at our Capitol Hill cafe.
