Coffee is about more than the caffeine. It’s the smell of freshly ground beans, the first warm sip, and a reason to slow down for a few minutes.

Our Organic Fiore Decaf brings that ritual to your cup with notes of apple pie, cinnamon, and molasses. Full-bodied and low in acidity, this certified organic blend uses coffees from Central and South America, with origins rotating seasonally to maintain a balanced, familiar profile. It’s decaffeinated using the Swiss Water method.

So how do you take caffeine out of coffee, and keep the flavor worth coming back for?

How is decaf coffee made?

Decaf starts with real coffee beans. Caffeine is removed while the beans are still green, before roasting develops the aromas and flavors we recognize in a finished cup.

The challenge is selectivity: removing caffeine while preserving the other compounds that contribute to coffee’s character. Water-based processes address this with a coffee-rich solution and specialized filtration. Other methods use solvents such as ethyl acetate to extract caffeine.

The method used is an important part of understanding what’s in your bag.

How does the Swiss Water Process work?

Swiss Water uses water, green coffee extract, and carbon filtration, without added decaffeination solvents such as methylene chloride or ethyl acetate. Here’s the process in plain language.

1. Prepare the beans.

Green coffee beans are cleaned and hydrated, preparing them for caffeine extraction.

2. Introduce green coffee extract.

The beans meet a solution called Green Coffee Extract, or GCE. It contains soluble coffee compounds but very little caffeine. That balance encourages caffeine to diffuse out of the beans while helping limit the loss of compounds that contribute to flavor.

3. Filter out the caffeine.

Specialized carbon filters capture caffeine from the extract. The refreshed extract can then be reused.

4. Dry the coffee.

The decaffeinated beans are carefully dried to a controlled moisture level, preparing them for storage and roasting.

The goal throughout is to preserve as much of the original coffee’s character as possible.

What makes Organic Fiore Decaf distinctive?

The process is one part of the story. The coffee itself is the other.

Organic Fiore Decaf combines certified organic sourcing, a seasonal blend, and a rich, comforting flavor profile. Apple pie brings a familiar fruit-and-baking-spice association, cinnamon adds warmth, and molasses suggests a deeper sweetness.

Its full body and low acidity make it an inviting choice for anyone who enjoys a rounded cup. And it’s versatile: brew it as your morning drip, take your time with a pour-over, or make it part of your espresso routine.
